I make a variation of this sandwich so many mornings, I have gotten it down and perfected!! I absolutely love breakfast sandwiches of any sort, but hate spending money on something that is so easy to make at home (and sometimes even tastes better from your own kitchen). I am a bacon lover, and usually use bacon or ham. But, this morning we had no bacon but we did have lox… which is a close second fav. I figured the saltiness of the lox would compare well to bacon, and BOY was I right?! It was delicious & of course I had to share (good thing I took photos along the way… just in case! haha). This sandwich would seriously be good with any meat. Is it strange I even wondered how this sandwich would taste with both bacon and lox in it this morning while eating? Just a little bit of surf & turf breakfast action! I think it’d be the way to go. Even try this on a bagel! Let me know what you think. Enjoy!
