I am so excited to bring this recipe to my blog for you guys! I was watching the cooking channel this weekend and they were making salmon patties on the grill for a burger. They looked so good that I thought up this recipe! I have been trying to eat less carbs and stick to lighter meals, so I wanted to put together something with out a bun- but would still be satisfying. I love arugula with seafood, and what pairs better with arugula and seafood than vinaigrette? I found a yummy recipe for a homemade vinaigrette and I absolutely love it (the recipe will be below)! I covered the pineapple in the dressing and grilled them, too! Then I topped it with an avocado salsa, yum! By the way, if you’re having trouble skinning the fish (which I did), definitely use your sharpest knife, one with no “teeth”, and make a small cut down to the skin. Then, fold the fish at the cut you just made and run the knife straight across the fish directly above the skin. I hope that makes sense!
