As a college student, a blogger, a girlfriend of a police officer, and a nanny… I am stretched thin. I am constantly busy and always have something on my to-do list. But, you can relate, right? Recently, with all of these life changes and new stressors, I have realized the importance of taking a moment for myself. My favorite way to take a moment out of my busy day? A yummy, good-for-you meal. There is something amazing about knowing you’re doing good for your body while enjoying a warm meal with just the company of yourself.
My days consist of waking up at 6am to prepare for a day of nannying (some of the most awesome kiddos). I’m usually off work around 3pm. Around 4pm, I have to be on campus for class until I’m out around 10pm. On the two days I don’t nanny or have class, you will find me working on blog posts or preparing content, or helping my boyfriend prepare for his week/ day ahead. Like I said, my meals are the time of the day I look forward to most, especially dinner… it’s like the cherry on top of an eventful day… there is something so sweet about it. During my break in class, I wander to the quad to sit by myself and enjoy a yummy meal to ponder my thoughts over. I am always looking for new, easy, delicious foods to take with me to go. Discovering Well Yes!® soups have been a life changer, especially now that the weather is cool. A warm soup is my best friend around dinner time. Which flavor is my favorite? Mine is definitely the Tomato Carrot Bisque. I just love a tangy tomato soup with the perfect accent of sweet carrot! It is so refreshing and light, but still so savory and delicious. It seriously makes for the best food when you’re out and about. I shamelessly and blissfully sit on campus with just myself and a yummy bowl of soup. The moment to myself is so peaceful, especially during the cooler months, when the leaves change color and you hear the wind travel through the trees. People watching is a favorite too, I must say.
I simply pack up my soup in an easy-to-carry microwaveable safe container. There are microwaves on campus students can use, so I plop it in and it’s ready to go in minutes! I like to add jalapeño chips & gouda cheese to my soup. The spiciness compliments the sweetness of the soup perfectly and the gouda adds extra creaminess that pairs so well with the tanginess of the tomato.
